  2. Take 500 gr boneless chicken thigh
  3. Take 4 tbsp plain yogurt / dahi
  4. Make ready 1 tsp turmeric powder
  5. Take 1 tsp coriander powder
  6. Prepare 1 tbsp salt
  7. Make ready 1/2 tsp chili powder
  8. Prepare Sauce/gravy:
  9. Take 300 gr chopped tomatoes/cubed tomatoes/tomato concasse
  10. Take 150 gr chopped red shallot/onion
  11. Get 6 pcs cardamom seed
  12. Get 4 pcs cloves
  13. Prepare 1/2 tsp fennel seed
  14. Get 1/2 tsp cumin seed
  15. Make ready 3 pcs bay leaves
  16. Get 3 pcs dried chili pepper
  17. Prepare 2 tsp turmeric powder
  18. Prepare 1/2 tsp chili powder
  19. Get 1/2 tsp coriander powder
  20. Make ready 1/2 tsp cumin powder
  21. Get 1 tsp ginger garlic paste
  22. Prepare 1-1,5 ltr water/chicken stock
  23. Get 4 tbsp cooking oil
  24. Get 2 tsp salt
  25. Make ready Raita:
  26. Take 200 gr plain yogurt
  27. Get 50-75 gr sliced cucumber
  28. Get 50-75 gr sliced tomatoes
  29. Prepare 1/2 tsp salt
  30. Take pinch pepper
  31. Take pinch cumin powder
  32. Take pinch coriander powder
Steps to make Chicken curry:
  1. Marinate the chicken thigh with the yogurt, salt, turmeric, coriander and chili powder. Mix it well until the tight coated with the marination
  2. Set aside and keep the chicken in the fridge for 30 minutes.
  3. In a pot, heat 4 tbsp cooking oil. Add the cardamom seeds, cloves, bay leaves, dried chili, cumin seeds, fennel seeds. Stir it for 2 minutes until the aroma is out.
  4. Add the ginger garlic paste, the turmeric powder, chili powder, cumin powder, coriander powder. Stir it a moment.
  5. Add chopped red shallot/onion. Stir it well an cooked it in a low medium heat for 5 minutes until shallot soft. Stir it properly to avoid onion burned.
  6. Add the chopped tomatoes. Cook them together for 30 minutes until the tomatoes very soft and oilly. Keep stirring it.
  7. Add the chicken thigh into the tomatoes mixture. Stir it for 1 - 2 minutes.
  8. Add the chicken stock/water until the chicken is covered properly.
  9. Cook/simmer the curry in low-medium heat until the curry is thickened and chicken thigh is well cooked. Stir it during 1 hour cooking.
  10. Season the curry with salt.
  11. Prepare raita: mixing the yogurt with the cucumber, tomatoes and season it with salt, pepper, coriander and cumin powder.
  12. After one hour cooking, the curry should be thicken already. If not, you may add some cornstarch. Serve it with a bowl of basmati rice and a bowl of raita.
