The chicken falls off the bone in this beautiful chicken and mushroom curry. A delicious sweet and spicy, authentic chicken and mushroom curry that's easy to make. When served at most curry houses, this chicken curry is served with chicken tikka - bite sized bits of chicken breast. Personally, I prefer to cook chicken I absolutely love this combination of ingredients.
Instructions to make Chicken and mushroom curry:
- In a pan add the oil and butter. Put the onions, garlic and ginger and slightly brown. Add the chicken breast and mushrooms and fry until the chicken turns white.
- Add all the spices and fry for a couple of minutes to infuse the flavour into the chicken.
- Add the tinned tomatoes, peppers, sweet potato and coconut milk and bring to a boil.
- Simmer on medium heat until the sauce turns creamy and sweet potatoes are soft (around 45 mins). Serve with boiled rice and/or garlic and herb naan bread (recipe coming up soon).
The chickpeas, coconut and mushrooms go fantastically well together. If texture is a thick after adding dry ingredients add a little water. Add whole boiled eggs and mushrooms to mixture and cook until chicken is cooked through.
