  4. Divide into 3 on a floured surface. Roughly 325g each. Shape each into a ball.
  5. Put on a tray, cover with cloth and refrigerate up to 3 or 4 days. It is ready to bake at any time
  6. 20 mins before baking while the oven is heating up, take out of fridge, onto floured surface and shape into pizza shape disired, either with rolling pin or by hand.
  7. Cook the pizza, once topped, on the highest temperature for 7-9 mins either on a pizza stone or baking sheet. Use parchment paper.

While making pizza crust with sourdough starter might take a little extra care, it's worth your time. The sourdough brings a robust tanginess to the dough, which pairs well with a host of toppings.
