Instructions to make Mini Chicken Satay with salsa:
- Take boneless chicken cubes and pat them slightly. In a bowl mix soya, vinegar, salt, black & white chilli powder, egg white cornflour, oil, periperi seasoning, baking powder. Mix well. Marinate chicken in airtight bowl in fridge.
- Cut the vegetables for satay. We are using mini satay peaks so cut in small cubes. Take 1Tbsp olive oil in a pan and toss all vegeis in pan on high flame for just a minute or 2. Sprinkle lemon juice and pinch of salt over.
- Heat oil in a wok. Fry all chicken cubes on medium heat. Keep on kitchen towel to remove extra oil. Arrange the satay take any combination of colourful vegies in satay, put the chicken cubes in between. Top with olives, green bell pepper or tomato.Make a quick salsa dip.serve hot. - To make salsa. Take flesh of 1 tomato, 1 small onion, garlic cloves, fresh coriander, 1 green chilli, salt, some crush chilli flakes (acc to taste) 1/4 tsp of each cumin and coriander seeds. Blend to coarse texture (not paste). Enjoy with Mini Chicken Satay, Tea and Cookpad.
