- Cook rice with bit of salt and 1 tsp of oil. Cool this completely.
- Heat oil in kadai add mustard, cumin, red chilli curry leaves. Once mustard splutter add chopped ginger and hing. Saute a bit.
- Add channa dal, peanut, cashews. Once channa dal and cashews turns golden colour add grated coconut and coriander leaves. Saute couple of minutes.
- Add this to rice and mix this thoroughly. Adjust salt level and serve hot.
