- Make ready 1 whole chicken (cut into pieces)
- Get SPICE PASTE:
- Prepare 12 shallots
- Get 4 garlics
- Prepare 2 cm ginger
- Make ready 2 cm galangal
- Prepare 2 cm turmeric (1 tsp turmeric powder)
- Get 2 tsp coriander seed
- Get 5 red chillies
- Take 1 tsp palm sugar

- Take 2 lemongrass (white part only)
- Take 1 tbsp tamarind (remove seed)
- Get 1 cup coconut milk (250 ml)
- Prepare 1 cup water
- Prepare Cooking oil
Instructions to make Chicken Rendang:
- Use food processor or blender to blend all the spice paste ingredients into a fine paste.
- Heat oil and fry the spice paste until fragrant.
- Add coconut milk and water. Mix well.
- Add kaffir lime leaves, lemongrass and tamarind.
- Add chicken, adjust the heat down (simmer), keep stirring and cook the chicken until it is tender (min. 30 minutes). Ready to serve.
